Finally, a Successful Broiled Chicken

So I hate making chicken that isn’t stir-fried, almost to the point that my only dish is curry. I’ve never come across a broiled chicken that I liked. I had some chicken thighs in the freezer today, so I thought I would try my hand at baking again. This time it worked! It was delicious.

I used this recipe for Easy Garlic Broiled Chicken, with various modifications to form the following recipe:

INGREDIENTS

  • 1/3 cup oil
  • 3 tablespoons minced garlic
  • 2 tablespoons soy sauce
  • 1/4 teaspoon black pepper
  • a few shakes of garlic spice mix
  • 6 boneless chicken thighs, with skin

DIRECTIONS

  1. Preheat the oven to 350 C. Lightly grease a baking pan.
  2. In a microwave safe bowl, mix the oil, garlic, soy sauce, pepper, and spice mix. Cook 2 minutes on High in the microwave.
  3. Arrange chicken on the baking pan, and coat with the oil mixture, reserving some of the mixture for basting.
  4. Bake chicken 30 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Serve with rice. Receive surprising compliments from extremely picky boyfriend.
