Finally, a Successful Broiled Chicken
So I hate making chicken that isn’t stir-fried, almost to the point that my only dish is curry. I’ve never come across a broiled chicken that I liked. I had some chicken thighs in the freezer today, so I thought I would try my hand at baking again. This time it worked! It was delicious.
I used this recipe for Easy Garlic Broiled Chicken, with various modifications to form the following recipe:
INGREDIENTS
- 1/3 cup oil
- 3 tablespoons minced garlic
- 2 tablespoons soy sauce
- 1/4 teaspoon black pepper
- a few shakes of garlic spice mix
- 6 boneless chicken thighs, with skin
DIRECTIONS
- Preheat the oven to 350 C. Lightly grease a baking pan.
- In a microwave safe bowl, mix the oil, garlic, soy sauce, pepper, and spice mix. Cook 2 minutes on High in the microwave.
- Arrange chicken on the baking pan, and coat with the oil mixture, reserving some of the mixture for basting.
- Bake chicken 30 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Serve with rice. Receive surprising compliments from extremely picky boyfriend.
